These days it seems like all you have to choose from when you want a good Chinese meal is a Chinese buffet. Real Chinese restaurants are rather hard to find unless you happen to live in a large metropolitan area such as San Francisco or New York City where there is an actual "China Town."

Don't get me wrong. Some of those buffets are mighty tasty, but they are designed to cater more to American tastes. The one we frequent in our town has pizza sitting right next to the Egg Foo Yung. I guess if you're craving Chinese food and your kids hate it, that's a decent solution.

But don't you sometimes get a hankering for a real Chinese restaurant? One that offers real Cantonese food, served family style, with a nice hot pot of Chinese tea to accompany it. Now I'm no expert, but there were dishes served in the Chinese restaurant my family went to when I was a kid that I don't see at the buffet. Things like plain old Chop Suey. Whatever happened to Chop Suey? That was tasty stuff on a bed of white rice. I liked it even as a kid, and you know how persnickety kids can be about vegetables. Chow Mein, anybody? Something else I haven't seen at ant buffet I've been to lately.

It was a real bargain if you went as a group. I remember they would add extra dishes the bigger the group was - for each person after four there would be one dish added - all family style. Plenty of food for everyone.

It seems that Szechuan has become the popular style today. It's a little spicier, but it is tasty. Then there's the Jiangsu which uses more braising and stewing techniques.
